Sublime Summer Recipe
Summer Pasta Salad
Perfect for the warmer weather, this salad is fresh and tasty - just the right accompaniment for a BBQ.

Ingredients:
400g spiral pasta
1 small jar pesto
1 red capsicum
1 punnet cherry tomatoes
1/4 cup black olives
1/3 cup sundried tomatoes
1/2 cup chopped basil
1/2 cup chopped shallots
Freshly ground black pepper
Shaved parmesan

Directions:

  1. Cook pasta until al dente in plenty of boiling salted water.
  2. Meanwhile, finely dice capsicum, and slice cherry tomatoes into halves. Combine together with basil, shallots, olives and sundried tomatoes in a large bowl.
  3. When pasta is cooked, drain and while still hot, mix through pesto. Place in fridge for 1 hour to cool.
  4. Once pasta is cool, combine with all other ingredients in large serving bowl. Season with freshly ground black pepper and serve with parmesan. Serves 4.

Mighty Muffin Pizzas

Ingredients:
1 English muffin, cut in half
1/4 cup chopped ham
1/4 cup sliced pineapple
1/2 cup grated mozzarella cheese
1 tbsp tomato paste

Directions:

  1. Spread each muffin half with tomato paste. Top with ham and pineapple and sprinkle with cheese.
  2. Pop under a hot grill until cheese melts.

Super Stuffed Potatoes

Ingredients:
3 large potatoes
2 rashers chopped bacon
1 cup peas, cooked
1/3 cup light sour cream
2 tablespoons grated tasty cheese
rock salt
olive oil

Directions:

  1. Preheat oven to 200°C.
  2. Rub the potatoes with olive oil and place on oven tray, along with a sprinkling of salt.
  3. Bake for 1 hour (or until cooked) and allow to cool.
  4. While the potato is baking, fry or microwave bacon until crisp. Place in a bowl along with the peas and sour cream.
  5. Dig the flesh out of the potatoes and add to the bowl. Mix everything to combine, then stuff back into potato skins.
  6. Sprinkle cheese over potatoes and cook for a further 7 minutes (or until melted).
